  2. Classification, characteristics, roles, and risks: pathogens, toxin producers, lactic and acetic bacteria, spore-formers, yeasts, and molds.

  1. Foodborne illnesses
  2. Main foodborne illness outbreaks, modes of action, growth conditions, prevention.

  1. Food contamination
  2. Sources and routes of contamination during production stages: reception, processing, storage, and preservation.

  1. Cleaning and disinfection
  2. Protocols, agent selection, key steps, effectiveness control.
